Mango Black Bean Salad

Instructions:

  • Step 1 – In a medium bowl, combine all ingredients.
  • Step 2 –  Refrigerate until serving.

Ingredients:

  • 1 can of creole crème style black beans (or pre-cooked premium select dried black beans)
  • 2 cups of diced mango
  • 1 cup od diced sweet red pepper
  • 6 green onions
  • ¼ cup of cilantro leaves (chopped)
  • 1/4 cup fresh lime juice
  • 1 Tbsp olive oil
  • 1 seeded jalapeno pepper, minced
  • Salt to taste
